Edit: I only know the best settings for converting the FLV's, not sure what your capture card is like.

Well I'm working on a post with the proper output settings using Sony Vegas over on EA's forums. I assume you could use the same ones and just adjust the resolutions accordingly to your captured video size. Should be done in roughly 10 minutes if you want to head over and check it out under Sick Tips.
there's a video track underneath the skate track, i don't know if people are seeing that thinking it's shit quality or what.
